What’s in it?
NANJOL baijiu is crafted from high-quality red sorghum, wheat, and pure water from the Chishui River, the lifeblood of Maotai Town’s legendary baijiu production. Our meticulous 12987 fermentation process develops layers of rich aroma, deep umami, and a lingering smooth finish. Extended aging further enhances the spirit, creating a harmonious balance of complexity and elegance.
The Process
NANJOL baijiu follows the traditional 12987 fermentation process, perfected in Maotai Town. Using red sorghum, wheat, and pure Chishui River water, the spirit undergoes nine rounds of fermentation and eight distillations over the course of a year. The carefully aged base liquor is then blended and refined, resulting in NANJOL’s signature rich aroma, smooth texture, and deep, lingering finish
